Cranberry Coffee Cake

I made these cranberry coffee cake, its goes very well with tea & coffee.


Ingredients :
115g butter
1 cup sugar
2 eggs
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups plain flour
1 tsp vanilla essence
1 cup sour cream
1/2 can whole cranberry

Method :
-Preheat oven to 180 degrees celsius
-Grease the bandt pan
-Sift the flour, baking power, baking soda & salt
-Cream the butter & sugar till light & fluffy
-Add in the eggs 1 at a time until incorporated, add vanilla essence
-Add in the sifted flour, alternating with the sour cream, ending with the flour
-Pour half the mixture into a greased bandt pan
-Add in 1/2 of the cranberry on top of the mixture
-Add the other half mixture in
-Put the remaining cranberry on top & just mix a bit using a spoon.
-Bake at 180 degrees celsius for 40 mins -45 mins

Elizabeth, I've been wanting to make bundt cakes since I bought several mini tins as they were on sale. I might just try out this recipe! Will let you know how it goes. ;p

Eliz, I made this bundt cake! It turned out nice and soft so thanks for sharing! I made some modifications to it- like using other kinds of berries and reducing the sugar amount to 3/4 cup.
